WHY I WROTE THIS BOOK

In late 2008, I embarked on a heartfelt journey to capture the essence of Palestinian cuisine, and decided to create a comprehensive cookbook that delves deep into the rich tapestry of flavors, traditions, and stories that define this culinary heritage. What emerged is not just a cookbook, but a 500-page odyssey—a love letter to native Palestine and its people.

Within the pages of this book, readers will find more than just recipes. It's a meticulous exploration of Palestinian culture, tracing the intricate connections between food, lifestyle, history, and geography. For the first time in their history, classic Palestinian recipes are not only documented but also categorized, revealing the subtle variations that emerge from different regions and communities.

But this book is more than just a collection of recipes. It's a celebration of Palestinian identity, told through the communal ceremonies, celebrations, and everyday life brought to focus through the lense of food.
